Great tasting beef is a combination of animal husbandry, feeding practices, aging the meat and quality meat cutting.
We raise Holstein steers for our beef. We find that they finish well — the meat is marbled but not covered in excess fat and they yield nicely portioned cuts. Moreover, we have a year round supply of Holstein steers ready for processing.
Our steers eat a balanced diet of grass, hay and barley with plenty of room to roam and mature naturally. Again, we follow our All Natural Protocol which states that all our livestock are raised in a low-stress environment, on a healthy vegetarian diet without the use of growth promoting medications or hormones.
We process only young steers around 20 months of age and dry age the meat for 14 days prior to cutting. Dry aging stretches the meat muscle and dries the carcass which delivers excellent taste and tenderness. You will taste a difference!
Our beef is raised in compliance with our All Natural protocol which states that no growth promoting medications or hormones are used, no animal by products are fed and that animals are raised in a low stress environment with room to roam. Our steers are fed a balanced ration of alfalfa hay, grass, barley grain and sileage.
What is Dry Aged Beef?
Dry aged beef has been stored or hung in the cooler for at least 14 days prior to cutting and wrapping. Dry aging allows moisture to evaporate and enzymes to break down some meat fibres. Dry aging intensifies the flavour and stretches the muscles to make a tender texture.
At Pine View Farms, all our beef is dry aged for 14 days before cutting and wrapping to guarantee tender, flavourful meat every time.
