
Sausage Soup with Cilantro
Ingredients
- 4 Pine View chorizo sausages, casings removed, sliced
- 2 cloves garlic, sliced
- 6 cups water
- 1 lg. can tomatoes or about 4-6 tomatoes,fresh/chopped or frozen
- 1 c. frozen corn kernels
- 2 carrots, sliced
- 1 can/undrained or 2 c. any cooked white beans
- 1 small zucchini, cubed small
- 1 bunch fresh cilantro, chopped coarsely/do not use stems salt & pepper to taste (I use 1 t. Celtic seasalt & about 3 twists of fresh ground pepper)
Instructions
- In fry pan, cook and stir together sausage & garlic slices till sausage is nicely browned. (Use a bit of olive oil as they stick to pan.)
- In stock pot or dutch oven, combine water, corn, tomatoes, carrots, beans, zucchini. Bring to a boil; let boil a couple of minutes, then turn heat down and add sausage/garlic mixture. Add cilantro.
- Simmer for 15 minutes or till carrots are tender. Add in seasalt and freshly ground pepper.
