Roast Leg Of Lamb

Ingredients

  • 4 cloves garlic thinly sliced
  • Dijon Mustard
  • Fresh or dried herbs of your choice: rosemary, thyme, oregano
  • Potatoes, carrots, onions
  • Fresh ground pepper and salt
  • Red wine for deglazing

Instructions

  1. Preheat oven to 325F.
  2. Cut slits in the top of the roast and insert garlic slivers.
  3. Cover the lamb leg with Dijon mustard, press chopped fresh herbs into the mustard and season with salt and pepper.
  4. Place leg in roasting pan and surround with vegetables.
  5. Roast until lamb reaches desired doneness.
  6. Deglaze the pan with red wine to make fantastic gravy.
This should serve 6-8.
