Roast Leg Of Lamb
Ingredients
- 4 cloves garlic thinly sliced
- Dijon Mustard
- Fresh or dried herbs of your choice: rosemary, thyme, oregano
- Potatoes, carrots, onions
- Fresh ground pepper and salt
- Red wine for deglazing
Instructions
- Preheat oven to 325F.
- Cut slits in the top of the roast and insert garlic
slivers.
- Cover the lamb leg with Dijon mustard, press chopped fresh herbs into the mustard and season with salt and pepper.
- Place leg in roasting pan and surround with vegetables.
- Roast until lamb reaches desired doneness.
- Deglaze the pan with red wine to make fantastic gravy.
This should serve 6-8.
